Candied Pineapple

We purchased a Huge Pineapple from the market. It looks so fresh, suddenly i thought to make some thing different with this fruit.This is the idea of making with this fruit.

Ingredients:
  1. Pineapple pieces            1 cup
  2. Sugar                             11/2 cup
  3. Water                            1 cup
Method:
  1. Heat sugar and water in high flame mix well for few min.
  2. After sugar dissolved well in water turn flame in to medium heat.
  3. Then slowly add pineapple pieces in to sugar solution and cook for 10 to 15 min
  4. Till pineapple pieces turn into crystal color.
  5. Turn off the flame and keep it to be  cool.
  6. After it become cool store it in glass jar.
  7. No need to refrigerate

Rice Kheer – Indian Classic Rice and Milk Desert

Kheer is classic simple traditional desert from  all over India.Kheer is prepared in each and every occasion in India.

Ingredients for Kheer:

  1. Basmathi rice                     1/2 cup (clean and wash with tap water)(soak for 20min)
  2. Ghee                                  1/2 tea spoon
  3. Condensed milk                 2 cups
  4. Milk                                   3 cups
  5. Green cardamom                2 or 3 Pound it in mortal
  6. Almonds                             few(cut into small pieces)
  7. Saffron                               few (soak it in warm milk)
Method:
  1. Add rice and ghee in  pressure cooker shallow fry for few min. in medium flame.
  2. Now add milk and cook in low flame till rice to become soft,then add condensed milk cook few more min in low flame till milk thickens.
  3. Then add cardamom powder and almond  pieces mix well and turn off the flame.Now add saffron and mix well.
  4. Serve warm or chilled.

Baby Potato Delight

 Last Sunday  i purchased cute baby potatoes,bunch of fresh curry leaves from our vegetable market.Usually
i will buy whenever i see these baby potatoes in the market Because we all like this buttery taste vegetable.Today my lunch menu is very simple and tasty boiled Baby Potatoes Stir Fry seasoned with   Roasted Curry leaves Spice powder  and Tomato Dal and Rice.Often  i love to make Spicy roasted Curry leaves Powder.Because this lovely Aromatic  Curry leaf have so many medicinal properties.It helps  to lower the blood sugar level and helps to digest our food.Today's my recipe is Cooked Baby Potatoes Stir Fry seasoned with Spicy Curry leaves Powder.

Classic Vegetable Grilled Sandwich

Sandwiches are all time favorite in our home.I have to give credits to my husband and  my sons.They love to experiment with vegetables and cheese.  My today’s great post is our home Sunday break fast delicacy:

Classic Vegetable Grilled Sandwich.

Ingredients:
  1. Brown bread           6 slices
  2. Potato (big)             1 (cook for 4min on high power in microwave)(remove skin and mash it in a bowl)
  3. Corinader chutney   1 cup(fresh cleaned 200g coriander leaves,small ginger piece,2 green chillies blend well in blender and add little salt,lemon juice and mix well)
  4.  Butter                     20g
Method:
  1. Take bread slices and cut sides carefully. Keep it aside.
  2. Now take coriander chutney in a wide bowl add butter and mashed potato mix well.
  3. Apply 1 spoon of  vegetable mix to bread slice and close with another bread slice.Grill in sandwich grill toaster for 2 to 3 min till slice to become crisp  golden brown color. Like grill to remaing slices also.
  4. Serve this piping hot Classic Vegetable Sandwiches with tomato ketchup along with fresh sliced vegetables like cucumber,carrot  and onion topping with dash of lemon juice and salt.And glass of any fresh fruit juice.

Microwave Garlic and Mint Multi grain bread Toast

Once i tasted Garlic and Basil Brushetta as a starter in one of the restaurents in Singapore.Usually Brushetta is  made with French loaf. Suddenly today evening an idea flashed in my mind .Why not make the Brushetta with multi grain bread!!!
So this is the my evening innovation!!!!
For this recipe i have taken
Ingredients:
  1. Multi grain bread                                 2 slices
  2. Garlic                                                  3 clove(finely grated)
  3. Mint(pudina)                                       5 leaves(cut into small pieces)
  4. Low fat cheese or Cheese spread        2 spoons
  5. Salt butter                                            2 spoons
  6. Black pepper powder                          2 tea spoons
  7. Salt                                                     pinch
  8. lemon juice                                         2 drops
Method:
  1. Take butter and low fat cheese in a wide bowl.
  2. Now add grated garlic,mint, blak pepper powder,salt and lemon juice.Mix well.
  3. Cut a bread slice  half and apply this cheese mix on to this slice.
  4. Keep these slice on the microwave oven’s convection  plate .Cook in convection mode in high power for 4min.
  5. Take out and serve with any soup

Idly(Steamed rice dumplings)

 The most popular South indian Breakfast savory- Idly is a steamed rice dumpling or fluffy smooth  lentil and rice cake. It is an all time favorite for everyone. Generally these Idlies are  served with spicy Idly podi (mixture of blended dry spices) served with melted Ghee or gingely oil, mildly spiced coconut chutney and Sambar (vegetable lentil soup).
 Black gram and Idly(boiled rice) rawa(powdered rice) is used to make the Idli. However, in some parts of south India, Idly(steamed) rice is used instead of Idly(boiled) rice rawa. The rice is soaked in water beforehand and ground well. I have used the Idly(boiled rice) rawa in my recipe for making Idlies.
 Black gram usually has a black colored skin. The de-skinned variety of black gram is available in the market which is white in color. I have used this "white" black gram for making Idlies- i.e white lentils.
